Pico de Gallo


4 plum tomatoes, diced
1/2 red onion, diced
2 scallions, white and green parts, sliced
1 serrano chile, seeded and minced
1/2 bunch cilantro, chopped
3 cloves garlic, minced
1 lime, juiced
1/4 C olive oil
1 t salt, coarse

In a mixing bowl, combine all ingredients together.  Toss thoroughly.  Let sit 15 min - 1 hour for flavors to marry.
